Cucumbers

Looking for a refreshing and healthy snack idea?












How about cucumbers?
1.Cucumbers are low in calories and with the skin, high in fiber.
2.Cucumbers are a good source of potassium.
3.Cucumbers are high in anti-oxidants.
4.Cucumbers, because of their high water content, act as a mild diuretic.
5.Cucumbers are a good source of Vitamin K which helps to build bone mass and guards against Alzheimer's disease.


And if you really want to pack a nutritional punch try a cucumber dip. I read lots of different recipes for the Greek dip, Tzatziki, and came up with my own version.

Cucumber Dip
1/2 English cucumber, seeded and peeled
1&1/2 cups plain Greek yogurt
1-2 cloves garlic, crushed
1 tablespoon olive oil
1 tablespoon lemon juice
1 teaspoon dried dill

Put all of these ingredients into the food processor and swirl until well mixed.

This is great with sliced cucumbers and any other cut up veggie you can think of. It's also good on pita bread or with pita chips.

So next time you want a snack, why not give cucumbers a try.
