Yesterday I wanted to make barbecue chicken sandwiches for dinner. My plan was to get the chicken into the crockpot before lunch. The only problem is that when I went to find the chicken I realized that what I had wasn't right. I needed boneless, skinless thighs and all I had were bone in with skin on thighs.
Well being that I had a busy afternoon planned I really didn't want to take the time to go to the store. Not to buy more chicken or any other kind of dinner food for that matter.
It was time for a new plan!
So I searched. High and low. I searched the cupboards, I searched the fridge,I searched the freezer. And I realized...I need to make more of an effort to have many more go to ingredients on hand than I did. And I really didn't have too many at all.
But finally! I found it!
Canned tuna and Bisquick. Plus milk which needed to be used and peas in the freezer.
Remember that creamed tuna and biscuit casserole you might have had as a child?
Well, we were having it tonight.
And it came out pretty good, if I do say so myself.

Creamed Tuna and Biscuit Casserole
4 tablespoons butter
4 tablespoons flour
3 cups milk
salt and pepper to taste
2, 7-ounce cans tuna (I had water packed.)
1 handful of peas (I use fewer than others might because the hubby doesn't care for peas.)
Bisquick and milk to mix it with
Rosemary, finely chopped
Preheat oven to 400 degrees. Melt the butter. Stir in flour and a bit of salt and pepper and cook and stir for 2-3 minutes. Slowly stir in milk. Cook and stir until mixture starts to bubble. Add tuna and peas. Taste and salt and pepper if needed. Pour mixture into an 8" by 8" baking dish.
Mix Bisquick according to package directions. I don't roll them out, instead I use my ice cream scoop to scoop them. Arrange the biscuits on top of the hot tuna mixture. Arrange them evenly. Brush the tops of the biscuits with olive oil and sprinkle with the Rosemary. I used fresh Rosemary right from my garden. Bake for 20 minutes or until biscuits are golden brown.
As I said, this was pretty good but I do need to have more go to items on hand. And I will be working on that!
